How Sapling Spirits started

Back in 2017, wildfires destroyed more than 150,000 trees on the west coast of Scotland. As regular tree-planting volunteers – Ed and Ivo, were asked to help restore the woodland on a large scale. Despite their best efforts they struggled to get enough volunteers to make an impact.

Their solution? Build something people wanted to join.

A simple volunteering day turned into a cocktail bar pop-up, which then evolved into a mini festival series: planting trees by day, celebrating by night.

However, the pair quickly realised that serving carbon intensive spirits was counter intuitive to their cause.

So, they fixed it the only way that made sense: they made their own.

Starting out in a shed in Peckham, London, Ed and Ivo crafted a premium vodka made from slow-grown organic winter wheat -clean, smooth, and climate-positive from field to bottle. After six months of refining, and taste-testing, they took 1,000 bottles to a local market. They sold out. Completely.

Sapling Spirits was born.

Today, their small-batch vodka and gin are produced in London’s Thames Distillery, led by multi-award-winning 6th-generation Master Distiller George Maxwell. For every bottle, Sapling plants a tree - balancing exceptional craft with a purpose that’s rooted in nature.

Running a climate-conscious spirits brand is every bit as complex as it sounds. Between batching, bottling, distilling, and scaling, Sapling’s growth brought increasingly intricate operations - and a lot of financial admin.

Supplier payments, scheduling, tracking spend across the month… it all added up. And with a lean team focused on impact and expansion (including a move into the US market), every hour mattered.

That’s where Mimo stepped in.

What used to be a weekly pain point is now a streamlined system that keeps Sapling organised, accurate, and focused. As they scale, Mimo grows with them - saving hours, preventing mistakes, and turning what once felt stressful into something refreshingly simple.
